Banana bread

And other important Mommy moments.

Son #2 is popping in and out since he’s finished another semester at Marquette. Last night about 10pm he proclaimed a desire for banana bread. No problem, I have bananas in the freezer. (I peel and save the occasional spotted one at three to a baggie.)

Here’s the recipe I’ll be using:

1/4 c. canola oil
1 c. sugar
1 egg
3 bananas (if they are frozen be sure to include the liquid from the thawed bananas, too)
1 1/2 c. flour
1 tsp. salt
1 tsp. soda

Mix oil, eggs and sugar. Add mashed bananas and flour, salt and soda. Bake in a greased and floured loaf pan at 350 degrees for 1 hour.

My intent is to withhold the finished product until that stuff is moved out of the basement. Wish me luck!

    1 to 5 cups of chocolate chips.

    I suppose that wouldn’t be the end of the world…

  3. Haha, Ok I got a little overzealous with the chocolate chips – I dont bake, I cook. I just know I love chocolate chips in my banana bread.
