Ok, so I’ve been talked into catering lunch and dinner for the oldest on a long day of shooting “the film.” I am to expect 35 young adults. Did I mention I’ve not really done anything like this before?
The menu as started:
Lunch:
wrap sandwiches – turkey or ham, plus cheese
gazpacho served in cups
vege platter
Dinner:
Anti-pasta Pasta salad
(chunks of cheese, salami, pepperoni in pasta and dressing with veges)
marinated grilled vegetables served cold
(eggplant, peppers, zuccini, mushrooms)
fruit salad
(cantelope, honeydew, grapes, berries)
sliced Italian bread with herbed dipping oils
lemon bars
brownies
choc chip cookies
sugar cookies
Any other ideas? I won’t have access to much except ice chests, so keep that in mind. I’m a little nervous about this one.

Vendor it out. Don’t do this yourself. You’ll crash and burn – too much to do. Call a caterer. You’ll be so happy you did. Worth every cent. Really.

I’ve always found that for a group the size you mention, and in their age range, meatballs are practical, cost effective, easy to prepare and most people like them. The eater gets to choose light or heavy and in each case they are filling, taking the pressure off your other selections. Costco, Sam’s Club, or something similar sells them pre-made and frozen by the bag. Make your own sauce, simple or fancy, and marinate them overnight to be heated on the big day. Get those small skewer sticks and have at them.

Nothing vegetarian? In a group of 35 you are bound to find someone with some sort of dietary restrictions?
Very produce heavy which is nice for a summer meal, but a hearty guy won’t be full. Offer some more bread, perhaps?

You and my kid. I’m trying to figure out if there are any vegans in the group or if I can get away with Lacto-ovo. If that’s the case I can do cheese wrap sandwiches. Portobello mushrooms will work for dinner.
What the heck does a “hearty guy” vegetarian eat? What if he’s vegan?
Wait – I have a corn/bean salad that might be a good addition.

People are going to be complaining about the Gazpacho being cold, when really it’s supposed to be, unless they took Spanish 2.

Corn/Bean salad sounds good. Salsa is good, too. I like thick crusty bread to go along with my veggie sandwiches.

I prefer garlic hummus personally. but mix it up. baba ganouj is good too… serve with pita chips. the ones that are salted with sea salt. yummmmm.
